Courgette & Lemon Curd Cake
A lighter alternative to our classic carrot cake. Made using grated courgettes, dried cranberries for an extra zesty vibrance. Filled with lashings of lemon curd and mascarpone and lemon juice icing. Finished with crushed pistachios. Some might say one of your five a day!!
